Spicy, Crunchy Chickpeas

1 (15-ounce) can chickpeas or 1 1/2 cups cooked chickpeas, drained, rinsed, and patted dry
1 teaspoon olive oil
1 teaspoon ground coriander
1/2 teaspoon curry powder
1/2 teaspoon red chili flakes (optional)
1/4 teaspoon salt
1/4 teaspoon ground black pepper

Preheat the oven to 375 degrees. In a small bowl, toss the chickpeas with the oil, coriander, curry powder, chili flakes, salt, and pepper. Arrange in a single layer on a baking sheet. Bake for 45 minutes, or until crisp and slightly brown. Serve warm or allow to cool.

CHICKPEA SALAD

This recipe is courtesy of Rachel Ray - it's easy and tasty!

Ingredients:
  • 2 (15-ounce) cans chickpeas, rinsed and drained
  • 1 small red onion finely chopped
  • 1 small red bell pepper, finely chopped
  • A few ribs celery and leafy tops, chopped (or cucumber)
  • 1 clove garlic, minced or grated then grinded into a paste with salt
  • 1/2 teaspoon crushed red pepper flakes
  • 2 tablespoons rosemary, finely chopped, a few sprigs
  • 2 tablespoons red wine vinegar
  • 3 tablespoons extra-virgin olive oil
  • Salt and freshly ground black pepper

Combine chick peas with onions, peppers, celery, garlic, red pepper flakes and rosemary in a medium bowl. Dress salad with vinegar and oil, salt and pepper.

Dandelion Greens with Pasta

I basically made this up tonight so the directions are pretty rough :)


Ingredients
  • wheat pasta
  • olive oil
  • chopped garlic
  • red onion
  • a can of chickpeas, drained
  • dandelion greens (from the store, not your backyard)
  • kosher salt to taste
Directions

Heat up olive oil in a large saucepan and add a ton of garlic (I added like 8 cloves - yum!) Chop up a red onion and add to the saucepan; sauté the garlic and onion on medium heat. Add washed dandelion greens (basically the leaves and smaller stems as the larger stems are tough) and chickpeas; sprinkle with kosher salt and stir occasionally till greens wilt.

Meanwhile cook the wheat pasta according to package directions (if you hate wheat pasta than use something else :) Before you know it you'll have a yummy dinner! I just made this up tonight so feel free to alter and share your changes.
