Key Lime Pie Milkshake
serves 1
Ingredients:
1/2 a ripe avocado
2 handfuls fresh spinach
Juice of 3 limes, about 6 Tablespoons
1 cup almond milk, or non-dairy milk of choice
Vanilla liquid stevia, to taste (I used agave)
2 handfuls of ice
Directions:
Add all the ingredients into a blender, and blend until smooth and creamy. Adjust sweetness to taste.

Everyone's Favorite Spinach Salad
1 pound spinach
1 can mandarin oranges
bacon bits
Dressing:
1 small onion, chopped
2/3 cup sugar
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. celery seed
1/3 cup white vinegar
2/3 cup canola oil
2 teaspoons mustard

Strawberry Spinach Salad
Salad Ingredients:
Dressing Ingredients:
Directions:
Place walnuts on a single layer pan and roast 1 hour at 250 degrees F. Meanwhile blend all dressing ingredients. Mix spinach, strawberries and walnuts well. Serve dressing at room temperature and pour on salad immediately before eating.
- 1 bag baby spinach, washed and spun dry
- 1 pint strawberries, washed and sliced
- 1 cup walnuts, coarsely chopped
Dressing Ingredients:
- 1/2 cup mild flavored oil, such as avocado or canola
- 1/4 cup red wine vinegar
- 1/2 cup sugar
- 1/4 teaspoon paprika
- 1-1/2 teaspoon minced onion
- 1 tablespoon poppy seed
- dash of Worcestershire Sauce
Directions:
