GUACAMOLE WITH A LITTLE KICK

2 medium sized ripe avocados
1/2 cup chopped tomatoes, unpeeled & unseeded
1/4 cup diced red onion
1/2 medium jalapeno pepper, seeded & diced
1 garlic clove, minced
2 tablespoons fresh parsley or cilantro, chopped
1 tablespoon lime juice
1/2 teaspoon salt


Cut avocados in half and remove pits. Scoop out flesh and put in a small mixing bowl. Mash with a fork until smooth. Stir in remaining ingredients and mix well. Chill 1-2 hours before serving. Yields 6 servings.
