EXTRA-MOIST CORNBREAD

1 cup yellow corn meal
1 cup sifted flour
1/2 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1/2 cup oil
2/3 cup milk
2 eggs, beaten


Preheat oven to 400 degrees F. Combine corn meal, flour, sugar, baking powder and salt in a large bowl. Mix oil, eggs and milk together in smaller bowl and add to dry ingredients with a few swift strokes. Bake in greased 9x9x2 inch pan for 25-30 minutes. Yields 16 servings.
