Dan's Quiche

Ingredients (in no particular order):
  • Olive oil
  • Garlic
  • Mushrooms
  • Pie Crust or something similar for your quiche
  • 9 or 10" round glass pan (or something similar)
  • Butter
  • Sour Cream (or cooking cream)
  • Four eggs
  • 1 cup of thick bacon, ham, pork, or something similar (in Spain we don't have American style back. It is more like the cut of pork that bacon comes from and is diced, not in strips)
  • Mozzarella
Directions:
  • Heat 3 tablespoons of olive oil over medium heat in frying pan
  • Mince 2 or 3 cloves of garlic and add to the oil
  • Add 3 cups of chopped mushroom (they will shrink after sauteing).
  • Saute until mushroom is soft and garlic is brown (the moisture from the mushrooms will keep the garlic from browning too fast) - 10 or 15 minutes, medium heat, uncovered (if you want to add onions, saute them for 10 minutes before adding the garlic and mushroom).
  • Butter your pan in the meantime
  • Cook your bacon and drain the grease
  • Put the sauteed garlic/mushrooms in a bowl with the drained bacon and let it cool for 10 minutes or so.
  • Preheat oven to 375 degrees
  • Beat four eggs along with 1 teaspoon of nutmeg.
  • Add 1 cup of sour cream to the eggs and "just beat it" (it will look like pancake batter).
  • Add a handful of shredded cheese to the eggs and save the rest of the cheese for the top of the quiche.
  • Add your bowl of garlic, mushrooms, and bacon to the egg mixture. Stir well.
  • Put your dough in the pan and spoon the quiche mixture in on top and spread it evenly.
  • Add thin layer of grated cheese to the cover the top.
  • Cut off any excess dough that may be hanging over the top
  • Bake for 30 to 35 until brown and a successfully passing of the "dry fork test."
  • If it isn't toasty yet and has been baking for 35 minutes, broil it for another 5 to crisp it up nicely.
