Strawberry Spinach Salad

Salad Ingredients:
  • 1 bag baby spinach, washed and spun dry
  • 1 pint strawberries, washed and sliced
  • 1 cup walnuts, coarsely chopped

Dressing Ingredients:
  • 1/2 cup mild flavored oil, such as avocado or canola
  • 1/4 cup red wine vinegar
  • 1/2 cup sugar
  • 1/4 teaspoon paprika
  • 1-1/2 teaspoon minced onion
  • 1 tablespoon poppy seed
  • dash of Worcestershire Sauce

Directions:

Place walnuts on a single layer pan and roast 1 hour at 250 degrees F. Meanwhile blend all dressing ingredients. Mix spinach, strawberries and walnuts well. Serve dressing at room temperature and pour on salad immediately before eating.
